Recipe for Stir Fry Sauce
Stir fries are fantastic meals to cook when you’re in a hurry or if you’re looking to up your intake for vegetables. Typically, ingredients are cooked together very quickly in some hot oil. Flavored oils like chili, garlic or sesame oil are very popular when cooking a stir fry as they give a great depth of flavor. Most stir fries consist of vegetables. Meat and a carbohydrate or usually rice noodles or egg noodles, although cooked rice is also used.
1.BLACK PEPPER CHICKEN RECIPE: This is full of spicy flavor. Serve it with plain rice to cool it down a bit.
INGREDIENTS:
400g chicken breast
4 tbsp sunflower oil
1 teaspoon black peppercorns
2 teaspoon lemon juice
1 teaspoon ground coriander
Pinch of salt or to taste
50g chopped cashews
Handful fresh chopped coriander, to garnish
HOW TO PREPARE:
Cut chicken into chunks.
Toast the peppercorns in a dry frying pan until they began to smell really fragrant. Bash them up until they have a coarse texture.
Heat the oil in a wok and stir fry the peppercorns for a few minutes.
Add the chicken and the ground coriander. Stir fry for around 10 minutes, and then add the salt. Cashew nuts and lemon juice. Allow them to cook for a minute or so and then serve hot garnished with fresh coriander.
This will serve four people. If you want your heat from elsewhere, use 1 fresh chilli or 1 teaspoon chilli powder or flakes.
2.PRAWN AND SESAME STIR FRY RECIPE: This flavorful and fresh stir fry would be perfect with either a zingy salad or some steamed rice.
INGREDIENTS:
500g prawns, peeled and deveined
250g sugar snap peas
175ml chicken broth stock
1 red pepper
3 spring onions
1 tbsp sesame seeds
2 tbsp corn flour
3 tbsp teriyaki sauce
1 garlic clove
½ tsp cayenne pepper
½ teaspoon ground ginger
HOW TO PREPARE:
Finely chop the spring onions and prepare the pepper by getting rid of the seeds ands pith, then chopped it finely. Mince the garlic clove.
Put the prawns, ginger, cayenne pepper, sesame seeds and minced garlic clove into a plastic bag and put the bag into the fridge to marinade for an hour or so.
When you’re ready to cook, heat the sesame oil in a wok and stir fry the pepper and spring onions for three to four minutes.
Add the teriyaki sauce then add the sugar snap peas and the prawns and cook for a further four minutes or until the prawns are just cooked.
Mix the corn flour with the4 chicken stock until smooth. Pour it into the stir fry and cook until the sauce boils, then remove from the heat and serve.
This recipe will serve four people. It would also be delicious with some salmon in place of the prawns. The salmon has to cut in cubes during its preparation.
